Hearty Vegetable Soup
This hearty vegetable soup will hit the spot on any wintry day. It has a little of everything, including lentils and pasta to make it into a wholesome and satisfying dish.
Ingredients
- 1 onion – diced
- Half a bunch of celery – diced
- 3 carrots – diced
- 1 green pepper – diced
- 2 yellow squash – diced
- 1 can No Salt Added Diced Tomatoes
- 4 oz lentils
- 4 oz angel hair pasta – broken into small pieces
- 2 tsp garlic powder
- 1 tsp poultry seasoning
- 1 tsp black pepper
- 2 tsp parsley flakes
- olive oil
Use a large pot. Add enough olive oil to saute the onions. Cook the onions about 5 minutes then add the vegetables starting with the celery, green pepper, then carrots, and squash. Cook another 10m to 15 minutes. Add the canned diced tomatoes, lentils, and pasta. Add enough water to make into a thick soup, more like a stew.
Add the seasonings. Reduce heat and simmer the soup for an hour or more.
