This recipe for mushroom dressing is an adaptation of our traditional holiday dressing. It is changed to be easy to chew and easy to swallow. The main changes are that only ingredients that can be cooked soft are included, they are chopped quite small and cooked longer than usual to render everything soft. The texture and taste are as one expects from a nice dressing.
Mushroom Dressing
Ingredients
- 2 Tbsp olive oil
- 2 Tbsp butter
- 2 onions, chopped small
- 1 box mushrooms, chopped small
- celery – the inside, soft stalks, chopped small
- optional ingredients
- 3 tsp Bell’s Seasoning
- 1 and 1/2 cup panko crumbs
- 1 cup unsalted chicken broth
Bell’s Seasoning consists of rosemary, oregano, sage, ginger, marjoram, thyme, and pepper. If you don’t have it substitute your own selection of spices.
Add the olive oil to a frying pan on medium heat. Add the butter and let it melt.
Add the onions and cook, stirring frequently, for about 10 minutes. Add the mushroom and cook for another 10 minutes.
Add the celery and any optional ingredients and cook 10 minutes more. In the photo here you can see a cut up green pepper and a small bunch of green onions as the additional ingredients.
Turn off the heat. Add the panko crumbs and seasonings. Stir well to combine.
Add the chicken broth.
Transfer to a casserole dish and bake covered for 30 minutes.
The dressing will be soft but tasty.
