Brunswick Stew – ETC-ETS

Brunswick Stew

This recipe is adapted from one published in the AJC.

The canned ingredients and the chicken broth should be with no salt added. If the canned beans have salt added discard the liquid and rinse them. The stew is chopped fine in a blender so it is easy to chew and easy to swallow.

Ingredients

  • 1 onion
  • 1 green pepper
  • 2 tbsp olive oil
  • 1/2 lb small potatoes
  • 1 can diced tomatoes
  • 1 can beans
  • 1 can corn
  • 2 cup chicken broth
  • 2 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/4 cup BBQ sauce
  • 2 cups rotisserie chicken

Brunswick Stew

Chop the onion and pepper about half inch and cook in oil about 10 minutes. Dice the potatoes and add them.

Add the tomatoes, beans and corn and broth. Add the spices.

Simmer for about 15 minutes.

Add the chicken and simmer for another 15 minutes.

Run through blender about a cup of the stew at a time. Blend course. Put into another pan. Then simmer another half hour or so.
